Five Spice Chicken Thighs
Ingredients:
- 8 chicken thighs, boneless and skinless
- 2 tablespoons soy sauce
- 2 teaspoons Shaoxing wine
- 3 tablespoons brown sugar
- 2 teaspoons five-spice powder
- 2 tablespoons red onion, minced
- 4 cloves garlic, minced
- 1 teaspoon vegetable oil
- 1 teaspoon sesame oil
Directions:
- Combine all ingredients in a bowl. Allow the chicken to marinate in the fridge for as long as possible.
- Preheat the oven to 350ºF.
- Place the chicken in a pan and bake for 30 minutes.
Chili Chicken Thighs
Ingredients:
- 8 chicken thighs, boneless and skinless
- ⅓ cup soy sauce
- ½ cup rice vinegar
- 6 tablespoons honey
- 3 tablespoons chili garlic sauce
- 6 cloves garlic, minced
- ¼ cup sesame oil
Directions:
- Combine all ingredients in a bowl. Allow the chicken to marinate in the fridge for as long as possible.
- Preheat the oven to 350ºF.
- Place the chicken in a pan and bake for 30 minutes.
Garlic Ginger Chicken Drumsticks
Ingredients:
- 10 chicken drumsticks
- ¼ cup soy sauce
- 6 tablespoons brown sugar
- 1 tablespoon ginger, shredded
- 8 cloves garlic, minced
- ¼ cup sesame oil
Directions:
- Combine all ingredients in a bowl. Allow the drumsticks to marinate in the fridge for as long as possible.
- Preheat the oven to 350ºF.
- Place the drumsticks in a pan and bake for 20 minutes.
Baked Asian Chicken Drumsticks
Ingredients:
- 10 chicken drumsticks
- ¼ cup soy sauce
- 3 tablespoons fish sauce
- 3 tablespoons rice wine vinegar
- ¼ cup brown sugar
- 4 cloves garlic, minced
- 1 tablespoon ginger, shredded
- juice of 1½ lemons
- 2 tablespoons sesame oil
Directions:
- Combine all ingredients in a bowl. Allow the drumsticks to marinate in the fridge for as long as possible.
- Preheat the oven to 350ºF.
- Place the drumsticks in a pan and bake for 20 minutes.
Vietnamese Chicken Thighs
Ingredients:
- 2 pounds chicken thighs, boneless and skinless
- ¼ cup soy sauce
- ¼ cup fish sauce
- ½ cup brown sugar
- 1 tablespoon ginger, minced
- juice and zest of ½ lime
- 3 cloves garlic, minced
- 2 tablespoons vegetable oil
Directions:
- Combine all ingredients in a bowl. Allow the chicken to marinate in the fridge for as long as possible.
- Preheat the oven to 350ºF.
- Place the chicken in a pan and bake for 30 minutes.
Pok Pok Vietnamese Chicken Wings
Ingredients:
- 3 pounds chicken wings
- ½ cup fish sauce
- ¾ cup brown sugar
- 4 cloves garlic, minced
Directions:
- Combine all ingredients in a bowl. Allow the chicken wings to marinate in the fridge for 3 hours or longer.
- Preheat the oven to 350ºF.
- Place the chicken in a pan and bake for 30 minutes.
Chicken Paprikash
Ingredients:
- 1½ pounds chicken thighs/drumsticks
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 2 tablespoon vegetable oil
- 1 medium onion, slicked thinly
- ¼ cup paprika
- 1 cup low sodium chicken stock
- ½ cup sour cream
- 1½ teaspoons cornstarch
Directions:
- Sprinkle salt and pepper onto the chicken.
- Put oil in a pan and brown the drumsticks, 2 batches at a time, 5-7 minutes each time. Be sure to flip and brown both sides of the chicken. When done, leave the drumsticks on a plate to cool.
- Add onions to the pan and stir fry a little, then cover and steam for 10 minutes.
- Add paprika and fry, stirring constantly, until the paprika is very fragrant, for about 30 seconds.
- Add chicken stock and salt, then bring the drumsticks back to the pot.
- Bring the pot to a boil and cover the lid. Turn down the heat to a gentle simmer and cook for about an hour, until the chicken falls off the bone.
- While the chicken is cooking, whisk sour cream and cornstarch together.
- When the chicken is done, temper the sour cream by transferring some cooking liquid from the chicken a spoonful at a time to the cream mixture, stirring after each addition. Once the sour cream is tempered, pour it all back into the pot and stir to combine.
Honey Soy Drumsticks
Ingredients:
- 8 chicken drumsticks
- ⅓ cup soy sauce
- ⅓ cup honey
- 3 tablespoons mirin
- 1 tablespoon ginger, minced
- 3 cloves garlic, minced
- 1 teaspoon sesame oil
Directions:
- Combine all ingredients in a bowl. Allow the drumsticks to marinate in the fridge for as long as possible.
- Preheat the oven to 350ºF.
- Place the drumsticks in a pan and bake for 20 minutes.
Cumin Tomato Chicken
Ingredients:
- 10 chicken drumsticks
- salt and pepper, to taste
- 1 teaspoon whole cumin seeds
- 2 teaspoons chili flakes
- 1 large onion, thinly sliced
- 2 tablespoons ginger, grated
- 6 garlic cloves, halved
- 2 pounds halved tomatoes
- 2 cinnamon sticks
- 4 bay leaves
- 4 tablespoons vegetable oil
Directions:
- Season the drumsticks with salt and pepper on both sides, to taste. Heat the vegetable oil with the onions in a pan and brown each drumstick on both sides, about 3-5 minutes per side. After all drumsticks are browned, set the chicken aside.
- Add the cumin seeds and chili to the pot, stirring rapidly for 10 to 15 seconds. Add the ginger, garlic, tomatoes, cinnamon, and bay leaves. Stir to combine. Allow the mixture to cook for about 10 minutes then add the chicken back to the pan. Cook the chicken through on low heat, around 30 to 45 minutes. (If the sauce becomes thick or sticky add about ½ cup water as needed)
